 | | EFFICIENT CANDY GLAZING | | | ALFRED L. WOLFF GmbH | | 23/06/2008 | | | Surface brilliance is more than just visual gloss. An efficient glazing is a protecting cover that keeps the chocolate-coated or sugar-coated candies fresh-tasting inside and fresh-looking outside.
The glazing agents Quick Glanz C, H, M, L belong to the professional line of Confectionery Performers developed by Alfred L. Wolff (Germany) throughout the past few years. Newly born in this range: Quick Glanz K. The key functionality of these glazing agents is to provide an evenly smooth cover and a stable surface polish as well as a perfect brilliance and glossy finishing for an eye-catching optical appeal. At the same time, a uniform surface glaze is essential for hard-panned and soft-panned goods (dragees) to protect the dragee product both inside and outside. The aforementioned types of glazing (or polishing) agents correspond to the individual product characteristics as to their components, consistency and structure, the different production parameters and the technical equipments used by the confectionery manufacturers.
Quick Glanz C is a glazing wax for hard dragees/pan-coated goods. It is based on pure carnauba wax spray powder without any additive. Quick Glanz L is a polishing dispersion for soft dragees/pan-coated goods such as jelly beans. This is a polishing agent in liquid form on the basis of carnauba wax in highly stable vegetable oil. Quick Glanz H is a polishing dispersion for hard dragees/pan-coated goods with or without sugar. In this case, natural and refined waxes are dispersed in food-grade alcohol. Quick Glanz M is a glazing wax for hard and/or soft dragees/pan-coated goods. This is a fine wax-mix in powder form which is based on natural beeswax and carnauba wax.
Quick Glanz K, the newcomer among ALW Quick Glanz agents, is a ready-to-use, light-coloured polishing powder, composed of micro-crystalline waxes and carnauba wax. Its specific efficiency lies in the fact that a fairly small quantity of the glazing powder very quickly provides a perfect surface gloss on hard-panned dragees. Quick Glanz K is applicable either on sugar-coated or on sugarfree dragees (pan-coated goods). Another process-performing advantage is the fact that no intermediate storage is required to dry and stabilize the coating layers prior to the polishing operation, which can take place in the same (conventional or automatic) coating-pan as the coating process.
According to the nature of the confectionery product to be polished, Alfred L.Wolff's confectionery team recommend the adequate Quick Glanz type to obtain
• A smooth and uniform surface gloss
• An eye-catching brilliance
• An efficient protection of the product surface and the center consistency
• A stable glazing layer throughout shelf life
• A long-lasting quality of the product flavour and colour
Quick Glanz glazing agents belong to the Alfred L. Wolff's line of Confectionery Performers along with Quick Coat, Quick Coat Sugarfree, Quick Shine, Quick Lac, Quick Acid, Quick Oil, Quick Chew. Each Quick Product has a specific function, from gumming to glazing or polishing, sealing, oiling or anti-sticking and souring of various candy types or, as well, to provide a pleasant texture to gelatine-free chewy confectioneries. | |
