Due to the significant price increase in fats and frying oils, extending the shelf-life of these products is important. New INOLENS 4 offers a natural solution at a competitive rate.
Many processors face major challenges extending the shelf life of edible and frying oils. The oxidation process of frying oils is even more pronounced due to high temperatures and multiple frying cycles. One of the most difficult tasks is how to apply a natural preservative without changing oil flavour, odour and, most importantly, colour. Adding oil soluble INOLENS 4 to oils and fats can increase their shelf life without compromising quality. INOLENS 4 also slows down the oxidation process and acrylamide formation while helping to achieve clean label-status.
“Vitiva has tested rosemary extract in comparison with potent synthetic anitoxidants, such as gallic acid and its salts, BHA, BHT and TBHQ,” says Ohad Cohen, CEO of Vitiva. “All of the synthetic antioxidants have reported undesirable effects including allergies, sensitivities, plus possible links to cancerogenity and mutanogenicity. This influenced Vitiva’s decision to avoid using them in its formulations.”
Many rosemary-derived ingredients on the market are green, with strong odour and taste characteristics making them an undesirable solution for sensitive products such as oils, marinades and bakery fillings. “Vitiva’s R&D team has successfully developed a natural solution based on rosemary that doesn’t affect the taste, odour or colour of edible and frying oils” notes Cohen.
INOLENS 4 has a green colour values up to five times lower than its predecessor, and red colour values up to 15 times lower than its predecessor in the same product line. In comparison to competing natural preservatives available, INOLENS 4 has up to 12 times lower green colour values and up to 50 times lower red colour values. These colour-control qualities make INOLENS 4 an outstanding natural solution for very light colour-sensitive applications. It can be applied to a wide range of applications, including: light-coloured mayonnaise, highly refined edible and frying oils, dressings, sauces, marinades, light-coloured confectionary and bakery fillings.
