AQUANOVA AG, leading supplier of special liquid formulations of nutraceuticals, food additives, cosmetic and pharma actives (“solubilisates”), has developed novel highly effective formulations of the classical preservatives sorbic and benzoic acid, specifically for surface preservation of foods, using its proprietary patented solubilization technology. For the first time the cheese and meat processing industries get the possibility to replace the currently used antibiotic Natamycin with harmless and safe classical food grade preservatives.
This new product generation, which AQUANOVA has developed under its established family - brand as NovaSOL® DC, cannot only be used for cheese and raw sausage such as salami, but equally successful on the surfaces of cereals, nuts, citrus fruits and other produce prone to moulds.
The extraordinary effectiveness of NovaSOL® DC is due to the micelle structure of the liquid formulation. The preservative is located homogenously inside stable and extremely small nature analogues product micelles (e.g. like micelles in milk). After treating the surface to be protected, with a solution of NovaSOL® DC, the micelles form continuous stable layers after the solvent (water) has evaporated, which cannot be penetrated by microorganisms. When the micelles get in touch with a biological membrane (microorganism), they open up and the benzoic or sorbic acid is released and can penetrate into the organism and deaden it. Because the acids are sheltered from their surrounding, they are always present in their active undissociated form.
Depending on the food to be preserved, NovaSOL® DC can be applied either in dipping baths or coatings or sprayed on as an aqueous solution. The stable and crystal free solubility of NovaSOL® DC is appr. 40 times as good as of the straight acids. Because of the food grade preservatives and excipients its use is safe and offers an alternative to the still widely used antibiotics.
Recrystallization of Natamycin on the surface during the coating process with PVA is a big practical problem, which strongly decreases its efficiency. The same is true for the water-soluble preserving salts Potassium-sorbate and Sodium-benzoate, which, after being sprayed onto a surface, form isolated crystals as soon as the water has evaporated. The individual crystals can by no means protect the entire surface. NovaSOL® DC, however, doesn’t crystallize but forms a stable, invisible and undetectable film, which protects against moulds and bacteria long term and reliably. The reputable German Institute for Food Technology (DIL) has even found NovaSOL® DC to perform as a bactericide against pathogen microorganisms like salmonella.
Beside NovaSOL® DC AQUANOVA has developed a range of micellized solubilisates for the preservation and disinfection of inorganic surfaces such as production machinery walls or air filters. These products will be launched soon. |  |
