AquaROX® 10, a new allergen-free and GMO-Free rosemary formulation, was shown to be a significantly effective protection for preserving fresh and frozen prawns.
Seafood is very sensitive to oxidation and cannot be kept fresh for a long time if it is only refrigerated. Due to its unique composition it is exposed to oxidative degradation, which results in unpleasant taste, odor, change in color as well as microbiological changes.
“We have tested AquaROX® on prawns sold in vacuum packs and in brine solutions,” explained Ohad Cohen, CEO at Vitiva. ”The results show that utilizing the new rosemary formulation in concentration of 0.2% on prawns in storage helps in maintaining their original great taste and color for up to 5 days, while sustaining excellent microbiological stability.”
Seafood processors are looking for various methods for extending shelf-life including among others refrigeration, freezing and pre-prepared thermal processing (deep frying and freezing) to keep the good taste while maintaining high sales. “The consumer demand for fresh and tasty seafood, while avoiding synthetic preservative ingredients, challenge the processor to use natural solution like AquaROX®“, says Cohen.
