MAXARITE DELITE BOOSTS TASTE, REDUCES SALT

DSM reports positive trial results for the use of its taste potentiator, Maxarite™ Delite, in reduced salt processed cheese. Low salt cheese containing Maxarite Delite consistently came top in taste tests when compared with standard and low salt equivalents. The addition of the taste potentiator enables salt reduction of 50 per cent, while boosting saltiness and overall flavour intensity. These results offer further evidence to support the use of Maxarite Delite in the development of processed cheese, cream cheese and cheddar cheese, which not only offer improved nutritional profile, in line with governmental initiatives for reduced salt intake, but also meet consumer demand for great tasting, healthier dairy products.

The trial compared three processed cheese samples; standard, low sodium and low sodium with 0.1% Maxarite Delite. The sensory tasting panel rated the cheeses on saltiness and overall flavour intensity. The samples containing low sodium / Maxarite Delite were clearly the preferred choice when evaluated against these criteria. In addition, Maxarite Delite mixed easily with the low sodium emulsifying salts and did not result in any changes during processing.

Hanneke Veldhuis commented: “In this trial, we have seen that by using low sodium emulsifying salts, the sodium content of the cheese can be reduced by 50 per cent. However, by using low sodium emulsifying salts with Maxarite Delite, both salt intensity and overall flavour intensity of cheese are boosted – so providing cheese that is healthy and enjoyable to eat. By ensuring that consumers enjoy healthier cheese options without compromising on taste, repeat purchase is secured. Moreover, our studies show that Maxarite Delite responds to manufacturing concerns - easily incorporated into processing without affecting product quality.”
