 | | DSM SHARPENS CITRUS ENZYME RANGE |  | | DSM | | 28/09/2007 | | | DSM now offers a complete range of enzymes for citrus fruit processing with the launch of its latest innovation – Rapidase® Citrus Cloudy. Specifically developed for the citrus industry, this exciting new enzyme will be of particular interest to processors looking to achieve cloud stability in citrus products.
Rapidase Citrus Cloudy contains specific pectinases that deliver viscosity reduction in all citrus juice products – keeping cloud stability. Simple to use, it can be added during the core wash and pulp wash processes to retain cloudiness. It also delivers the added benefit of improving the extraction of valuable soluble and insoluble fibres which can be used as a sugar source in soft drinks and clouding agents in drink bases.
“Citrus fruit processing presents a number of challenges for manufacturers due to the fruit’s complex physical structure,” comments Isabelle van Rolleghem, industry Manager Fruit Processing and Wine Ingredients. “As DSM, we have taken into account the diverse biochemical compositions and developed a portfolio of ingredients which truly meet the needs of the citrus fruit processing industry. Rapidase Citrus Cloudy complements DSM’s existing citrus processing range including Rapidase Intense and the Rapidase C80L products. For manufacturers looking to improve clarification and concentration in lemon juice, Rapidase Intense is an easy to use enzyme which is both active and stable at very low pH.
Completing the range, the Rapidase C80L product is multi-purpose, pectinolytic enzyme which contains an ideal combination of pectinases and hemicellulases for citrus processing.
