Although there is 40 percent less sodium in this version, careful aging allows it to retain the nuanced flavors and quality characteristics of naturally brewed soy sauce, including the elusive 'fifth flavor' called umami," said Ken Saito, president of Kikkoman International Inc.

"The flavor enhancing qualities of Kikkoman Less Sodium Soy Sauce can make healthier foods such as vegetables and whole grains more appealing," added Executive Chef Sean O'Brien of Myth Restaurant in San Francisco.

Kikkoman recommends its less sodium soy sauce be added at the end of cooking so that it doesn't get diluted or "cooked off".

Leslie Bonci, M.P.H., R.D., is a registered dietitian and the Director of Sports Nutrition at the University of Pittsburgh Medical Center. Leslie has served eight years as a spokesperson for the American Dietetic Association. Currently, she appears on "The Winning Plate," a television segment of a CBS-affliate morning news show in Pittsburgh.

Savory Steak & Spinach Salad Ingredients: 3 tablespoons Kikkoman Less Sodium Soy Sauce, divided 3 tablespoons red wine vinegar, divided 1 clove garlic, pressed 1/4 teaspoon black pepper 3/4 pound boneless tender beef steak, about 3/4 inch thick 1/4 cup vegetable oil 1/4 teaspoon dried oregano leaves, crumbled 1 pound fresh spinach, washed, stems removed and leaves torn into bite-size pieces 6 ounces fresh mushrooms, sliced 3 oranges, peeled and cut into sections Instructions: 1. Blend 2 Tbsp. less sodium soy sauce, 1 Tbsp. vinegar, garlic and pepper; pour over steak in large plastic food storage bag. Press air out of bag; close top securely. Turn bag over several times to coat both sides. Marinate 30 minutes; turn bag over occasionally. 2. Meanwhile, combine remaining 1 Tbsp. less sodium soy sauce, 2 Tbsp. vinegar, oil and oregano. 3. Broil steak 5 minutes on each side (for medium-rare), or to desired degree of doneness. 4. Cut steak across grain into thin slices; combine with spinach, mushrooms and oranges in large bowl. 5.
